Smoked fish and sweetcorn wraps

Time: 30 minutes
Ingredients
- 2 big tomatoes or 10 small tomatoes
- 1 lime
- Fresh coriander
- 6 white tortilla wraps or hard corn tacos
- 1 tsp dried oregano
- 1 tsp ground cumin
- 2 tsp ground paprika
- 2 x 100g smoked basa fillets or any smoked fish
- 2 Tbs chipotle sauce or mix: chilli flakes, cider vinegar, smoked paprika, oregano, cumin, sugar & salt
- 1 can of sweetcorn (198g)
- 3 Tbs mayonaise
Method
Cook fish:
- Fry fish in olive oil in pan breaking up as you go and remove skin.
- Squeeze lime over fish and add salt and pepper.
- Sprinkle the ground cumin, paprika & dried oregano over the fish and add the drained sweetcorn to the other side of the pan
Make salsa:
- Chop tomatoes, coriander and add lime juice and salt and pepper.
Make chipotle dressing:
- Mix chipotle paste, mayonnaise and a few drops of water to make a runny sauce.
Serve:
- Prepare wraps or tacos.
- Serve with fresh coriander.
