Aubergine chicken

Time: 30 minutes
Notes: Serve with couscous and fresh coriander.
Ingredients
- 1 medium aubergine, chopped
- 1 onion, sliced
- 2 cloves garlic, crushed
- 4 chicken breasts, cubed
- 3 cups spinach (optional)
- 1 T Italian herbs
- 1 can chopped tomatoes
- Pinch of chilli
- 1 T fresh basil
Method
- Sauté oil and garlic.
- Add aubergine and fry for 5 minutes or until soft.
- Add chicken and fry for 7 minutes until cooked.
- Add spinach and wilt.
- Add seasoning and all herbs.
- Mix and simmer on low- medium for 10 minutes.
