Ingredients
  - 2 T olive oil
 
  - 1 onion, chopped
 
  - 2 cloves garlic, finely chopped
 
  - 1 yellow/red pepper
 
  - 2 tins tomatoes
 
  - 1 tub mushrooms, sliced
 
  - 2 handfuls fresh baby spinach
 
  - 1 t cumin
 
  - 1 t cayenne pepper
 
  - 1/2 t chilli flakes
 
  - 1/2 t oregano
 
  - 1 t sugar
 
  - S&P
 
  - 2 eggs per person
 
Method
  - Fry onion and garlic until soft and browning.
 
  - Add peppers, mushrooms and spices and fry for 2-3 minutes.
 
  - Add tinned tomatoes, bring to simmer and cook 20-25 minutes to allow to thicken.
 
  - Stir in fresh spinach.
 
  - Crack in 4 eggs (2 per person), add lid and allow to steam and cook for 5-7 minutes depending how set you want your eggs.
 
  - Serve with feta on-top (optional) and toast.
