Mexican bean chilli

Ingredients
- Olive oil
- 1 onion, chopped
- 1 red pepper, chopped
- 2 tins black beans
- 1 tin butter beans
- 1 tin red beans
- 2 crushed garlic cloves
- 1 tin chopped tomatoes
- 1 packed chilli/taco spice mix
- S&P
Method
- Fry onion until soft.
- Add garlic, red pepper and spices and fry (2 mins).
- Mix in tomatoes, beans (drain liquid from all tins except 1- add this liquid in).
- Bring to the boil and then reduce to simmer for 30 minutes until beans are soft.
- Serve with tacos or on rice with salsa and coriander.
