Mushroom and tomato Dahl

Ingredients
- 2 Tbs olive oil
- 1 onion
- 2 garlic cloves
- 1/2 tsp parsley
- 1/4 tsp dried coriander
- 1/4 tsp chilli flakes
- 1 tsp cumin
- 200 g baby tomatoes
- 1 punnet brown mushrooms
- 70 g baby spinach
- 900ml water
- 400g red lentils
- Bunch of fresh coriander
Method
- Chop onion and garlic and fry in some olive oil on medium heat until soft.
- Stir in all dried spices.
- Add in tomatoes (halved) and sliced brown mushrooms.
- Add 25ml water and cook for 5-6 mins.
- Stir in the lentils and 400ml water. Cook for 25-30mins.
- Add in the remaining water little by little until the lentils are cooked through.
- Taste and spice as needed (may need more cumin and chilli).
- Stir in the baby spinach.
- Serve with fresh coriander.
