Thai green curry

Ingredients
- 2 T veg/coconut oil
- 1 finely chopped onion
- 3 chopped garlic cloves
- 4 cm piece ginger
- 1 lemongrass stem bruised
- 4 lime leaves (optional)
- 3-4 T Thai green curry paste
- 1 T sugar
- prawns/chicken/beef/tofu/veg
- 2 limes’ juice
- 1-2 T fish sauce
- 1 400g can coconut milk
To Serve
- 300g green beans
- 2 chopped tomatoes
- Jasmine rice
- Fresh coriander
Method
- Heat oil, fry onion, garlic, ginger, lemon grass and lime leaves.
- Add curry paste and meat, stir fry for 2-3 minutes.
- Stir in last ingredients and allow to simmer for 5 minutes.
- Add fresh coriander and chillies to taste.
