Broccoli and bacon soup
Yield: serves 6
Time: 1 hour
Ingredients
- 1 medium onion, chopped
- 2 T butter
- 1.5 L water
- 2 medium potatoes/sweet potatoes, peeled and chopped
- 1 cube chicken stock
- 2 heads broccoli, washed and chopped
- 150 ml milk (optional)
- Bacon, chopped small (1/2 for soup and 1/2 for topping) *can remove for vegetarian
Method
- Melt butter, fry onion until soft (don’t brown).
- Stir in 1/2 of bacon and cook with onions.
- Add potatoes, stock, water and bring to the boil.
- Simmer 15-20 mins until the potatoes are soft.
- Add broccoli, simmer 10 mins, add S&P for taste.
- Pour in milk and blend with hand blender.
- Serve with crispy bacon on-top.
