Thai rice soup
Yield: Serves 2-4

Ingredients
- 3 chicken breasts
- 2 carrots chopped small
- 2 celery sticks chopped small
- 3 Tbs fish sauce
- 1 Tbs green Thai curry paste
- 1 1/2 lime juice
- 1 litre and 3/4 cup chicken stock
- 3 stalks crushed fresh lemongrass sticks
- 5cm peeled and chopped fresh garlic
- 1/2 cup white rice
- 1 can coconut milk
- 2 green chillies chopped
- handful of fresh coriander
Method
- If using chicken, start by frying chicken with fish sauce and lime juice. Keep to the side.
- Bring chicken stock, lemongrass, ginger and curry paste to a simmer.
- Add the rice and simmer for 15 minutes.
- Add the coconut milk and bring to a simmer.
- If using, stir in cooked chicken until heated up.
- Stir in fresh chilli and coriander
