Quick mushroom soup

Ingredients
- 1 onion, chopped
- Olive oil
- 400g mushrooms, sliced
- 2 T plain flour
- 2 T butter
- 4 cups chicken stock
- 1 tsp thyme
Method
- Heat the oil, fry onion and garlic until soft.
- Add mushrooms and fry until brown.
- Add butter and flour and whisk to cook.
- Pour in the stock and bring to boil. Add thyme.
- Simmer for 15 minutes.
- Blend with stick blender until smooth.
Serve with cream-cheese toast
