Easy tinned tomato soup
Yield: Serves 6

Ingredients
- 4 Tbs olive oil
- 4 Tbs butter
- 3 1/2 cups chopped onions
- 3 gloves crushed garlic
- 1/2 tsp thyme
- 1/4 cup flour
- 6 cups chicken stock
- 3 cans chopped tomatoes
- 2 Tbs sugar
Method
- Heat oil and butter, fry onion and garlic until soft.
- Add chicken broth, tomato, sugar, S&P and thyme.
- Bring to boil. Be careful- the soup bubbles wildly when boiling.
- Reduce heat and cook for another 20 minutes.
- Add flour and whisk.
- Use stick blender to blend until smooth.
