Swedish health soup

Ingredients
- Olive oil
- 2 chopped red onions
- 2 sweet potatoes (or butternut)
- 6 chopped carrots
- 1/2 red pepper
- thumb sized fresh ginger, finely chopped
- 1/2 t cayenne pepper
- 1 t turmeric
- 2-3 garlic cloves, finely chopped
- 1/2 tin coconut milk
Method
- Fry onions in olive oil until soft (don’t brown).
- Add carrots, sweet potatoes/butternut, carrots, ref pepper, ginger and enough water to cover all vegetables.
- Add turmeric, cayenne pepper and bring to the boil.
- Simmer for 15 minutes or until all veggies are soft.
- Add red better and coconut milk.
- Blend with hand blender and serve with fresh coriander.
