Oat and date cookies

Ingredients
- 1 cup Instant Oats (Oatmeal) , (instant variety)
- 1/2- 1 cup flour
- 1/2 cup Dates , chopped
- 1/4 cup Brown Sugar
- 1/2 cup coconut oil
- 1 beaten egg
- 1 teaspoon Baking powder
- 1/2 teaspoon Baking soda
- 1 Tablespooon cocoa (optional)
- 2 teaspoons Vanilla Extract
Method
- Pre-heat oven to 180° C
- Blitz 3/4 of the oats in a blender (leave the rest for texture)
- Mix together oats, 1/2 cup flour, baking powder, baking soda and cocoa
- In a seperate bowl mix melted coconut oil, sugar, vanilla and chopped dates and mix until sugar has dissolved.
- Add wet and dry ingredients together and add in beaten egg.
- If mixture is too dry, add some milk. It it’s too wet, add some more flour.
- Make small balls in dough and press gently to make small circles.
- Bake for 20 to 25 minutes at 180° C in preheated oven.
