Pear and almond cake

Ingredients
- 100g soft butter
- 70g sugar
- 2 eggs
- 100g Self Raising White Flour
- 100g ground almonds
- 1 teaspoon almond essense
- 3 ripe pears
- butter, for tin
Method
- Pre-heat oven to 170°C and grease cake tin
- Grind your whole almonds in blender if you’re using whole almonds
- Put the butter cubes and sugar into a mixing bowl and beat together until light and fluffy.
- Beat in the eggs one at a time.
- Sieve the flour into the bowl and mix well.
- Add almond essense and ground almonds and stir to combine.
- Tip the mixture into the prepared tin and smooth the top.
- Slice the pears and arrange them over the top of the cake.
- Optinal: Scatter sugar over the top.
- Bake for 50-55 minutes until a toothpick comes out clean.
